30 Day Shred: Day 3, Level 1

It DOES get easier, seriously.

I stopped a lot less and found myself pushing through the end of most of the exercises. Still a bit of difficulty with some though, especially arms.

And at the end, I could only do like half the bicycle crunches, I kept stopping. 

Oh well, I did it. 3 days down.

 I know how you feel! I’m on Day 3 of Level 1 as well :)

Golden Thai Curry with Green Beans

Ingredients
1 lb sweet potatoes, cubed
3 medium carrots, cut into half moons
1/2 lb green beans, cut into 1-inch pieces
1 tbsp coconut oil
1 medium onion, chopped
3 cloves garlic, minced
2 1/2 tbsp penang or yellow curry paste
1 tbsp peanut butter
1 13.5 oz can light coconut milk
1 tsp sugar
1 red bell pepper, diced
2 tbsp thinly sliced basil leaves
Instructions
Bring a large pot of salted water to a boil.  Cook the potatoes for 7 minutes, then remove with a slotted spoon.  Add carrots, cook 10 minutes, and remove with a slotted spoon.  Add green beans and cook 5 minutes, remove with a slotted spoon.  Set aside all vegetables.
Heat oil in pot over medium heat.  Add onion and cook 7 minutes, or until starting to brown.  Stir in garlic, curry paste and peanut butter.  Cook 1 minute.  Add coconut milk, 1/2 cup water, and sugar.  Bring mixture to a simmer. Stir in potatoes, carrots and bell pepper.  Simmer 10 minutes.  Add green beans and basil, and cook 2 minutes more.

I need to kick start my ass again. I’ve gotten kind of complacent in my working out and I have definitely been taking it easier on myself than I was before vacation.

So tomorrow I think I am going to start Jillian Michaels 30 Day Shred and feel the pain as everyone seems to.

….And I can’t wait! Already measured myself and took some pictures so I can compare if I lose inches like everyone else seems to be doing!

Mybodygallery.com just spent quite awhile looking on there, how can someone 5’9 weigh 115lbs? Maybe they have a super tiny frame, because my goal is 160 and I think I will be pretty thin then. Crazy, and some killer body envy feelings.


But I can do this! I will do this. Just takes time.and dedication.
